Have you ever used Fresh Ginger?

Have you ever used Fresh Ginger before?  This is what it looks like if you’ve never seen it.  You can find it fresh like this in every grocery store.

This is what it looks like inside. You may have heard of Ginger Snaps, Ginger Bread, Ginger Beer, Candied Ginger.  Ginger can be used in both Sweet and Savory dishes but dried ground Ginger is not a substitute for fresh Ginger as they are very different in flavor and texture.

*Check out my blog post from October 5, 2019 on Fresh Seared Ahi Tuna marinated and served with fresh Ginger.

You can grate, thinly slice or chop Fresh Ginger.  I peeled it with a vegetable peeler first.

Finely chopped Ginger, so fragrant and delicious.

Eli’s Blueberry Pepper Jam

One of John’s customers, Atwood Family Farms in Eustis, Florida makes this fabulous Jam! We tried it today on Ezekiel English Muffins.  It was absolutely delicious. Homemade, Fresh, Peppery, Plump Berries but with lots of Juice. It tasted and looked as if it had just been made today. It was different than store bought, over the shelf type Jam, which is “tight”. This was loose and juicy, drinkable, with plump berries that had just been picked.  After the first bite I wanted more and I kept adding more juice over the top. It seeped into the Muffin, The Peppery Tones were unique and something I hadn’t tasted before in a Blueberry Jam.

I would buy this again and recommend it to all of you. It was only $5. I’m certain we will be ordering more!

Happy Eating!

Grilled and Stuffed Jalapeño Poppers (3 simple ingredients) Great for Game Day!

1).With a small knife or your fingers pull all the seeds and cartilage out from the inside of the Jalapeño Peppers.  This can be done under running water.  You may start to cough as they are strong and the oils will go right up into your nose and throat.

2). Generously fill a spoon with room temp Cream Cheese and stuff into the Pepper. *You want as much as you can stuff because you will lose some as it is grilling. *You need the Cream Cheese to offset the Heat when eating.

3). Start at one end and wrap one slice of Bacon around about to the center.  Then, starting at the other end take a 2nd piece of Bacon and wrap around from the other direction to meet in the center. Secure with a toothpick. *2 pieces of Bacon per Jalapeño.

Place on Hot Grill.  Flip to Grill all sides.  After you have a nice char move to the outside of the heat (off heat) and cover.  You want the outside Bacon to be crispy but you also have to make sure the Jalapeño becomes al dente (softened but to the tooth). *Note that some of the Cream Cheese may start to seep out, this is why we stuff them so full.

YUM!  This appetizer does require a small plate and a fork and sharp knife to eat.  They can be a bit messy.  I serve 2 per person.

Bon Appetite!

Harissa Paste

Hey everyone, hope you are having great week!  For those of you in Arizona I must say it is an absolutely gorgeous day after that sand storm we had yesterday. My patio is covered in sand so we have some cleaning up to do! For those of you in the Midwest I am sorry to hear you may be getting another 10 inches of snow!  Yikes!  What happened to Spring! No matter where you live there is always some element of nature you have to deal with.

I haven’t posted in a while but woke up thinking I should share a little bit about Harissa Paste.  Funny thing to wake up thinking about but it’s true!  Continue reading “Harissa Paste”
