Giant Macadamia Nut Pancakes with Coconut Syrup

I bet you would like to grab a fork and sink your teeth into that beautiful Giant Macadamia Nut Pancake?! Every time we travel to the island of Maui we must stop at “Fred’s Mexican Cafe” for breakfast. We were there most recently on May 1, 2018. The very first time we went there, we were hooked! If my memory serves me right, we have been there at least 4 or 5 times.
The view, looking across the road looks right at the ocean. We always sit at a smaller table for two, outside, right on the edge , so we can look at the beautiful view. We always go the Fred’s for Breakfast but I bet it is a super fun place for Happy Hour and on the weekends.
The very first time we went here, I ordered the Huevos Rancheros and have never strayed from it. It was so delicious that I insisted the next visit we go back again , hence a tradition began.
So, this time and the last time I didn’t feel the Heuvos Rancheros was as good as it had been in the past, but it was ok. I’m not sure what was different,, but I suppose maybe different cooks make it different…put their own spin on it. I don’t know, it just seemed to lack something and could have certainly used some Fresh Snipped Chives, Parsley or Cilantro for color and added flavor. It was a little disappointing and I’m not sure I would order it again now with it being just “so, so” two visits in a row. The positive thing I guess, is that I will have to explore the menu now and start over, a whole new adventure and hopefully find another love to make me happy, for awhile anyway…
John ordered the Breakfast Sandwich which he has also ordered before and seems to like it. It’s just a basic Breakfast Sandwich, nothing over the top but none-the-less, good. You have an option of several different sides but when in Hawaii one must order White Rice. It’s very good, simple and sticky just the way we like it. We ordered too much food this visit with the Pancakes but super enjoyable and we always take our time and just relax and enjoy, Maui-style.
Each time I go I also get a Bloody Mary with the “Midwestern” Beer Chaser; aka: SNIT which confuses the server but one must have a Beer Chaser with their Bloody Mary! They do a good job with the mix and its got good heat and bold flavors…of course I always have to add extra Hot Sauce…never quite hot enough.
*For those of you who don’t know about the Beer Chaser or SNIT, it is common in the Midwest especially Minnesota where I’m from and Wisconsin where my husband is from.
This picture gives you a little glimpse of what the restaurant looks like. Sitting outside we can see back into the restaurant inside. There is also an upstairs area where the bathrooms are located and there is another bar area up there. The place is pretty big, has a Mexican, Tropical, Bar feel to it, outdoor seating along the rails and bright colors.
