Sautéed Spinach Omelette with Herbs de Province and Mozzarella

DSC_0087I made this for breakfast this morning.  So silky and smooth with the Sautéed Spinach, a little bit of Butter and Extra Virgin Olive Oil, really good melting Mozzarella Cheese and the kicker…herbs de Province.  Really delicious!

    1. Hi Becky, you would love herbs de Province. It is a combination of dried herbs made up of savory, thyme, fennel seed, marjoram, rosemary, sage, basil and lavender. It is very earthy. When you go to the supermarket just look for herb de Province – easy to find. It originated in France as far as I know. Really good in stewed things like Chicken thighs too. Let me know what you think when you get it!
